We are currently awaiting the NEW 2008 CROP.
The bourbon vanilla beans offered on our site are organically grown, CERTIFIED ORGANIC by the Union of Comoros Minister of Development and Agriculture.
The vanilla is imported using Air Freight from the Comoros Islands located off the northeastern coast of Madagascar. We deal directly with the grower and have access to over 30 tons of product! The beans are standard 6-7" inches in length.
All orders are usually shipped within 24 hours via USPS Priority mail M-F.
Our Commitment to the Bean
Why use a vanilla bean at all? Why not use a low cost synthetic artificial vanilla?
Two reasons:
1. With over 250 different volatile compounds found in a vanilla bean, each contributes to the richness of flavor and aroma. The vanillin utilized in synthetic vanilla extract in the United States is primarily Lignin vanillin, produced from by-products of the paper industry that are treated to mimic the vanilla flavor.
2. The function of a spice is to add flavor to our foods. Flavor is a combination of sensations from the taste buds in our mouth and the aroma receptors in the upper reaches of our nose. There are only a handful of different tastes (sweet, sour, salty, bitter and savory); however there are thousands of different aromas. It is these aromas that make an apple "taste" like an apple and not like an onion or a carrot. So in isolating the vanillin for synthetic extract we are losing over 240 other aromatic compounds that were present in the whole vanilla bean.
Storing the Bean
All orders are vacuum packed in USDA approved bags. Upon receipt, please remove the vanilla beans from the bag and store in an airtight container in a cool, dry space. DO NOT refrigerate, as it may induce the growth of mold.
